Blueberry Lemon Banana Bread

With summer on it’s way, it is time to lighten things up a bit,  including my daily slice of Banana bread.
I have come up with a Blueberry Lemon Banana bread that is light and fresh. We all love the Blueberry and Lemon combination, it’s a classic! And the bursting little Blueberries in every bite make this an irresistible treat. Perfect for breakfast,  afternoon tea or as a simple snack.
I have made this Blueberry Lemon banana bread recipe with my gluten free flour blend but you can substitute it for regular flour,  you may need to add a little splash of milk or water to the batter since regular flour absorbs more liquid. Just add about two tablespoons, it should be a thick batter but pourable.

INGREDIENTS:

3 medium very ripe bananas
2 large eggs
1/3 cup oil
1/3 cup rice syrup, honey
Juice of 1/2 lemon
2 tsp. vanilla
1/8 tsp. Salt
2 cups (gluten free) all purpose flour
2 tsp. baking powder
1/2 tsp. baking soda
1 cup blueberries tossed in one tablespoon flour, frozen *
Zest of 1/2  lemon (yellow part only)

INSTRUCTIONS:

Pre heat oven to 180C/350F
Line a loaf tin with parchment paper and spray with oil.

Start by blending the bananas with the eggs,  oil, rice syrup or honey, vanilla and lemon juice, in a blender or food processor until smooth.  Alternatively you can mash and whisk by hand in a large bowl.
In a large bowl,  mix the flour, salt, lemon zest, baking powder,  baking soda and whisk to combine.  Add the batter from the food processor and mix carefully with a rubber spatula to combine. Add the blueberries and combine gently.
Pour into loaf tin and place in the middle of the oven,  bake for 50 to 55 minutes or until cooked thru. Insert a wooden skewer into the middle to test, if it comes out dry the blueberry banana bread is done. Remove from oven and place on a rack to cool.

*Note: I prefer frozen Blueberries since they keep their shape better.

Vegan meatballs, amazing texture.

These vegan meatballs are the perfect base for all your favorite dishes. This recipe is without sauce or gravy  because they are meant to be as a base for other recipes, like Spaghetti and meatballs,  Swedish meatballs,  meatball Curry with rice or a great meatball sandwich for instance.

A vegan meatball that has the texture of actual meat. Holds together, not mushy like most, but firm and with bite. I made these one night with mashed potatoes in Swedish meatballs style and the next night I poured a sticky honey chili maple glaze over them and served them over rice.  They freeze well too, you could easily make a double batch and always have a supply for a quick dinner fix.
So whether you’ re a vegetarian, a vegan or simply trying to eat more veggies,  these are a  great option and you really need to try them.

Makes around 24 meatballs.
Serves 4-6. Double if needed.

INGREDIENTS:

1/2 cup red lentils
1/2 cup tvp* see not (I use pea tvp)
1/4 cup  chopped dehydrated vegetables (mix for soup)**see note
1/2 onion chopped
2-3 garlic cloves, peeled and grated
3 tbsp olive oil
1/2 vegetable stock cube, crumbled fine
1/2 cup chickpea flour
1/4 cup quick oats
2 tbsp pine nuts (optional but delicious)
A dash of liquid smoke
A dash of franks hot sauce
1/2 tsp vegan Worchestershire sauce
Pepper
2 tbsps ground flaxseed plus 3 tablespoons water, or 2 eggs

INSTRUCTIONS:

Cook lentils and tvp in a bit of salted water for around 5 minutes, or until almost soft, but still semi firm. Drain in a colander and return to the pan, add the dehydrated veggies, they will absorb the excess water.  Set aside and let cool.
Cook onion and garlic in oil for 5 minutes until soft. Set aside to cool.
In a large bowl mix, lentil-tvp-veg mixture with onion and garlic.
Add all the remaining ingredients and let sit for 5 minutes,  now grab a ball of the mixture with your hand and gently squeeze to see if it holds.  Add a splash of water if it seems too dry or add a bit more flour if it seems too wet.
Shape into balls, the size of a ping pong ball approximately.
Place in refrigerator for two hours before baking to firm up.
Pre heat oven to 220C/450F.
Place balls on a silicone baking sheet and spray with oil (or drizzle over).
Bake 15 minutes turning halfway.
Use straight away with your favorite sauce or let cool and store in ziplock bag in the refrigerator or freezer for later use.

Healthy Granola Bars, extra protein!

I’ve said this a million times, but I am a serial-snacker. I need to be able to reach out and grab something no matter where I am, and luckily I always can. I have a lot of recipes for healthy snack as you can see here. I love love bars. They are so perfect for any occasion. To take to work, or to take from the kitchen down the corridor to your home office, like in my case or to give to the kids to take to school. Or even after a gym session.

They are loaded with fibre, healthy fats (hello omega-3) and of course oats! Oats are a true power house and one of the healthiest grains around. Oats are also loaded with important vitamins, minerals, and antioxidants. And even contain protein.

The wonderful thing about these bars is that they don’t fall apart, like most healthy bars. And bars that do stick together are usually loaded with sugar (used as glue). The trick here is the egg, it’s perfect and also adds more nutrition. I prefer to use dark chocolate because it contains less sugar, but you can use chocolate chips if you prefer. Also change up fruit and nuts as you please. All of that doesn’t matter and is according to taste. I love apricots because they contain a lot of potassium.

To make this vegan, simply replace egg with a chia egg or flax egg by using one tablespoon of seeds plus three tablespoons water. Let it sit for 10 minutes before mixing in with the rest of the ingredients.



INGREDIENTS:

• 2 cups old-fashioned rolled oats
• 1 cup oat flour
• ¼ cup protein powder, I use rice protein
• ¼ cup melted coconut oil
• 1/4 cup almond butter
• 1/3 cup rice syrup, or maple syrup
• 2 teaspoons pure vanilla extract
• 3/4 cup roughly chopped pecans or nuts of choice.
• 1/4 cup sesame, pumpkin and sunflower seeds
• 1/4 cup unsweetened coconut flakes
• ¼ cup chopped dried apricots, and/or raisins
• 1/4 teaspoon kosher salt
• 2 x 1/4 cup chopped 78% dark chocolate
• 1 large egg
• 1 – 2 tbsp. water



INSTRUCTIONS:

Pre heat oven to 350 F / 180 C.

Start by making your own oat flour by blending oats in a food processor.

Then in a large non-stick frying pan, toast the nuts gently for a few minutes. Then add the seeds as well and toast for another minute or two. Transfer to a plate to cool.
In a large bowl mix oats, oat flour and protein powder. Stir to combine.

In a small saucepan, gently heat coconut oil, almond butter and rice syrup until soft and combined, add the vanilla and mix. Remove from heat and let cool.

Add the cooled nuts, seeds, coconut flakes, apricots/raisins together with the salt to the bowl with the oats in it. Stir to combine. Also add a quarter cup chopped chocolate and stir through.

Now beat the egg in a small bowl and add to the dry ingredients together with the cooled oil and syrup mixture. Stir to combine.
Once combined well, pick up a small mount and squeeze together in the palm of your hand. If it sticks together well, it’s ready to bake. Otherwise add a tablespoon of water and combine again.

Now place the mixture in a baking tin lined with parchment paper and bake for 30 to 35 minutes. Remove from oven and let cool completely before cutting into bars. I prefer to let the tin sit in the fridge overnight before cutting.
In a small heat proof bowl microwave the remaining quarter cup chocolate at 10 second intervals until melted. Cut the bars into preferred size and drizzle with the chocolate using a small spoon.
Place in a Tupperware and keep in the fridge for about 6 days. You can also freeze these.

Amish soft white Spelt bread

A soft, pillowy bread made with white Spelt flour. With just 6 ingredients you can make this wonderful Amish style soft white Spelt bread at home with minimum effort. It’s a very simple recipe and straightforward,  even if this is your first attempt to making bread ever. You will succeed.
I believe that this is one of those recipes that everyone should have in their….I want to say note book, but I’m probably the only person who still writes things down, so save it wherever you do.
Anyway, getting off track here, this is one of those recipes you will keep coming back to. 
Use all purpose flour if you don’t have Spelt, no problem at all.

INGREDIENTS:

1 cup (hand) warm water
1 tbsp. White sugar
1 sachet/2 1/4 tsp. instant yeast
2 tsp. Neutral oil
3 cups white Spelt flour
1 tsp. Salt
1 beaten egg for brushing loaf

INSTRUCTIONS:

In a glass jug, add one cup hand warm water and stir in the tablespoon of sugar until dissolved.  Sprinkle the yeast over the water and stir gently to dissolve. Let sit for 5 to 10 minutes until bubbly. Stir in the oil.

To the bowl of your stand mixer, add two cups of the flour and the teaspoon of salt.
Stir to combine.

Pour the wet mixture over the flour in the bowl and with the hook attachment knead until well combined, around two to three minutes. Now add the remaining flour. You may need a little less if you are using regular flour, so don’t add the whole remaining cup all at once. 

Once you have added the flour, knead for 7 minutes until soft to the touch.
Place in a large lightly oiled bowl and cover with a tea towel or cling film.
Let rise in a warm spot until double in bulk, about one to an hour and a half.
Punch down the dough and fold by hand a few times on a floured surface.
Place the dough in an oiled and parchment lined bread tin of about 9″ × 4″ .
Cover loosely with oil sprayed cling film and leave to rise until double in height.

Meanwhile preheat oven to 180C/350 F

Brush the loaf with the beaten egg and pace in the middle of the oven and bake for 30 to 35 minutes.  The bread loaf should sound hollow when you tap on it,  if you’re not sure, insert a wooden skewer in the center of the bread,  it should come out dry.

Also, if the bread becomes too dark for your liking, cover loosely with foil.
Remove bread from oven and place on a rack to cool, after 5 minutes remove from bread tin and let cool completely. This loaf freezes very well.
